Jerk is a style of cooking, native to Jamaica. Meat is dry-rubbed or wet marinated with a hot spice mixture called Jamaican jerk spice. Chef’s Speciality Jerk Paste is a great marinade combining hot scotch bonnet peppers, brown sugar, lime juice and cider vinegar to create a classic jerk flavour. Chef’s Speciality Jerk Paste is perfect for steaks, chicken, pork or shrimp. You can serve the Jerk meats with rice or tacos.
